Cast Iron
Chuck roast smothered down with onions and gravy until it falls apart.
Low heat and a heavy lid. Brown the roast hard, then let the pot do the rest for three hours.
Stuff the roast with garlic slivers, season heavily, and dust with flour.
Brown all sides in a hot dutch oven or cast aluminum roaster.
Add the onions and cook until they collapse, then pour in the stock.
Cover and cook at 325°F for 2 hours.
Add potatoes and carrots and cook 45-60 minutes more until fork tender.
Skim the gravy and serve with rice or bread.
