Dutch Oven Bread
A crackling crust, no kneading, and nothing but a cast iron dutch oven.
- Prep 12 hours (mostly resting)
- Cook 45 minutes
- Serves 1 loaf
Cast iron traps the steam and gives you a bakery crust at home. Mix the dough the night before and bake it the next day.
Method

Stir the flour, salt and yeast together, add the water, and mix into a shaggy dough.

Cover and rest at room temperature 10-12 hours.

Preheat the dutch oven with the lid on at 450°F for 30 minutes.

Shape the dough, drop it into the hot pot, cover, and bake 30 minutes.

Remove the lid and bake 12-15 minutes more until deep brown. Cool before slicing.
